If you haven't tried roasting broccoli yet, you're in for a treat! Tossed with garlic, lemon zest, and Parmesan cheese, it’s bound to become a new family favourite. Give it a try—your taste buds will thank you!
Best Broccoli Side Dish
4 lbs broccoli
4 garlic cloves peeled & sliced
Olive oil or coconut oil
1 1/2 tsp kosher salt
1/2 tsp freshly ground black pepper
2 tsp grated lemon zest
2 Tbsp freshly squeezed lemon juice
1/3 cup freshly grated Parmesan cheese

Preheat the oven to 400°F.
Cut broccoli florets from thick stalks, leaving an inch or two of stalk attached to florets, discarding rest of stalks. Cut larger pieces through base of head with a small knife, pulling florets apart. You should have about 8 cups of florets.
Place broccoli florets on a sheet pan large enough to hold them in a single layer. Toss garlic on the broccoli & drizzle with 5 tablespoons olive oil. Sprinkle with salt & pepper.
Roast for 20-25 minutes, until crisp-tender & tips of some of florets are browned. Remove broccoli from oven & immediately toss with 1 1/2 tablespoons olive oil, lemon zest, lemon juice, & Parmesan. Serve hot.
