Celery Root Radicchio Salad with Warm Date Dressing & Pistachios
Warm Date Dressing
1/3 cup olive oil
1 medium shallot, sliced
1/4 tsp smoked paprika
1/4 tsp red pepper flakes, optional
1 1/2 tsp grainy mustard
1/3 cup chopped Medjool dates (about 4-5 dates)
3 Tbsp balsamic vinegar sea salt & ground black pepper, to taste
Celery Root Radicchio Salad
1 small head celery root, peeled & julienned
2 tsp lemon juice
2 tsp olive oil
sea salt & ground black pepper, to taste
2 heads radicchio, cored & chopped
1/4 cup flat parsley leaves, chopped
1/4 cup salted shelled pistachios, finely chopped

Heat olive oil in a saucepan over medium heat. Add sliced shallots & swirl them around. You want them to cook on a low simmer for about 5 mins, until soft but not browned at all. Add smoked paprika, red pepper flakes & swirl oil again. Add grainy mustard, chopped dates, balsamic vinegar, salt & pepper. Bring mixture up to a boil, breaking up chunks of dates with spatula. Place a lid on & turn off heat, keep dressing warm.
In a bowl, toss julienned celery root with lemon juice, olive oil, salt & pepper.
Arrange chopped radicchio in a single layer on a large serving platter. Spoon warm dressing evenly over radicchio. Break up the fudgy bits of dates to distribute. Scatter dressed celery root on top. Garnish salad with chopped pistachios & parsley.
