Celery Salad with Greek Yogurt Dressing

Celery Salad with Greek Yogurt Dressing

The Dressing
3 large garlic cloves
1/4 cup plain Greek yogurt
1 Tbsp lemon juice
1 Tbsp olive oil
1 tsp Aleppo pepper
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper

The Salad
1/2 cup slivered almonds
1 bunch celery thinly sliced, leaves reserved
3 scallions, white & green parts thinly sliced
1/3 cup chopped fresh mint leaves

Peel garlic cloves then finely mince them. Take flat side of your knife & drag it across minced garlic multiple times until it becomes a paste. Add it to a medium bowl. Add yogurt, lemon juice, olive oil, Aleppo pepper, kosher salt, & freshly ground black pepper to the bowl with garlic paste. Whisk together until well combined.

Set a small dry skillet over medium heat & add slivered almonds. Toss occasionally over next 2-4 minutes, until almonds are golden brown & fragrant. Transfer to a plate to cool.

To the bowl with the dressing add thinly sliced celery stalks, thinly sliced scallions, chopped mint. Reserve two tablespoons of slivered almonds for garnish, add remaining almonds to bowl. Use a rubber spatula & stir to combine making sure you coat all vegetables evenly. Garnish with additional mint, remaining two tablespoons of slivered almonds, and 1/3 cup roughly chopped celery leaves. Serve immediately.
