Looking for something a little bit different to go along with a roast dinner? Give parsnip puree a try! It's silky smooth and oh so sweet - a perfect accompaniment to whatever dish you're serving.
Creamy Parsnip Puree
3 lbs parsnips peeled & cut into 1" chunks
3 cloves garlic smashed & peeled
1/2 cup half & half cream room temperature
4 Tbsp unsalted butter softened
1 Tbsp chopped fresh thyme or your favourite herbs
1 tsp kosher salt or 1/2 tsp table salt
1/4 tsp freshly ground black pepper

Place the parsnips and garlic in a large pot & fill with enough water to cover by 1". Cover the pot & bring to a boil over medium high heat. Remove the lid & simmer for 10-15 minutes or until the parsnips are fork tender.
Drain the parsnips well in a colander. Place the parsnips back in the pot & add the softened butter & half and half. Using an immersion blender, puree the mixture until smooth. If you don't have one, puree in a blender or food processor.
Add the salt, pepper & fresh thyme, & stir well to combine.
