Dill pickles are so last year! Well, not really. Dill pickles are great, but so are Dilly Beans! Add these quick pickled beans to salads, chopped finely to egg or tuna salad sandwiches, use as a garnish in a tomato juice cocktail, or just devour them straight from the jar!
Overnight Dilly Bean Recipe
2-3 C french beans
1 mashed clove garlic
2T fresh chopped dill
1/2 C water
1/4 C plus 2 T. white vinegar
1 t sugar
pinch kosher salt
1/2 t ground coriander (or coriander seeds)
small pinch red pepper flakes

Bring water, vinegar, salt, and sugar to a boil in a small saucepan. Remove from heat & allow to cool completely.
Add garlic, dill, coriander, & red pepper flakes to the bottom of 500ml mason jar.
Wash green beans, trim the ends so they will fit in the jar, fill jar.
Pour cooled pickling liquid into the jar leaving 1/4" space near the top. Secure lid & refrigerate for at least 24 hours.
