Easy Roasted Cabbage Salad

This Easy Roasted Cabbage Salad is the perfect mix of crispy, caramelized cabbage and a tangy, creamy dressing. With a few simple ingredients, it’s quick to whip up and packed with deliciousness. Whether served warm, room temperature, or cold, this salad is sure to become a new favourite!

Easy Roasted Cabbage Salad

Cabbage
1 small head green cabbage
2 Tbsp olive oil
salt & pepper to taste

Dressing
3 Tbsp olive oil
1 Tbsp rice vinegar
1½ tsp low sodium soy sauce
1 tsp Dijon mustard
1 large clove garlic, minced
2 Tbsp freshly grated Parmesan
salt & pepper to taste

Optional toppings/add ins
4 strips cooked bacon, chopped
3 Tbsp chopped chives

Preheat your oven to 425℉. Slice your cabbage head in half, then remove the stem from your cabbage head & slice the halves into 1 inch pieces. Place them on your extra large baking sheet & drizzle with olive oil & season with salt & pepper to taste. Toss well to coat all. Spread them out evenly & bake for 20-25 minutes.

Whisk together all of the dressing ingredients in a small glass or bowl. Taste & adjust anything if needed. Once the cabbage is done, transfer it to a bowl & toss with the dressing to coat. Enjoy warm or room temp or cold!
