
Fresh salsa is a world away from jarred salsa from the grocery store. The flavours are fresh and bright, and when you make it yourself you can modify it to suit your taste - add more or less cilantro, swap the lemon juice for lime, or add fresh or dried hot peppers to taste.
Quick Cherry Tomato Salsa
2 finely chopped green onions
3 cloves garlic
3 C cherry tomatoes
½ cC cilantro leaves, packed
2 T lemon juice
salt to taste

Finely chop the onions, garlic & cilantro. Quarter cherry tomatoes (or chop smaller if desired). Mix together. If there is a lot of excess liquid, drain some out.
Add the lemon juice & salt & stir.
Serve with tortilla chips.
Note: Store in the refrigerator for up to 3 days.
