Salmon Teriyaki with Bok Choy One Pan Dinner

Perfect for busy weeknights, this dish features tender salmon and crisp bok choy, all coated in a savory teriyaki glaze. With minimal prep and cleanup, you can enjoy a delicious, nutritious meal that’s sure to impress, whether served over rice or noodles!

Salmon Teriyaki with Bok Choy One Pan Dinner

1/2 cup Teriyaki sauce

3 Tbsp soy sauce
1 Tbsp mirin
1 Tbsp fresh ginger, grated
2 cloves of garlic, minced
1.5 lbs salmon filet
4 baby bok choy halved or quartered
spring onions
sesame seeds, optional

In a small bowl mix Teriyaki sauce, soy sauce, mirin, ginger & garlic. Take 4 tbsp of the marinade from mix & pour over salmon, let it marinate for 30 minutes in the refrigerator. Keep reserved marinade for bok choy & glaze. Preheat the oven to 350F.

Take the salmon filet out of marinade & arrange on a baking sheet together with bok choy. Brush teriyaki marinade over bok choy & bake in oven for 20 minutes. While salmon & bok choy are cooking, put remaining marinade in a small saucepan & bring to a boil until it thickens. Set aside.

Take salmon & bok choy out of oven, remove bok choy to a serving plate. Change oven setting to a broil/grill & move oven rack closer to element, then broil salmon for 1-2 minutes for a caramelized top, watch closely!

Take salmon out of oven & brush glaze over salmon & bok choy, sprinkle with sliced spring onions & sesame seeds. Serve immediately with rice, noodles or on it's own.
