This hearty, flavour-packed dish brings together juicy sausages, tender potatoes, and tangy sauerkraut in a warm, comforting skillet. Sausages & Sauerkraut
2 Tbsp olive oil
5 bratwurst sausages (or your favourite local sausages)
1 large yellow onion
1 ½ lb potatoes
1 Tbsp caraway seeds
½ tsp nutmeg
12 oz. lager or pilsner beer
1 dried by leaf
2 ½ cups drained sauerkraut
½ cup apple juice
fresh chives, for garnish
buttered brown bread, for serving
mustard, for serving
In a large skillet with a lid, heat oil over medium high. Prick sausages all over with the tip of a knife & add to the skillet. Cook, turning occasionally, until browned on all sides, about 5 minutes. Transfer to a plate.
Add the onion, potatoes, caraway, & nutmeg to the skillet & season generously with salt & pepper. Cook, stirring often, until onions are softened, about 5 minutes. Add the beer & the bay leaf & bring to a simmer. Cover the skillet, reduce heat to medium, & simmer for 10 minutes.
Uncover the skillet, add the sauerkraut & apple juice. Nestle the sausages among the potatoes, sauerkraut & return the skillet to a simmer. Cover & cook until potatoes are tender when pierced with a knife & sausages are just cooked through, about 5 minutes more.
Garnish with chives & serve with brown bread & mustard.
