Scalloped Potatoes

These Scalloped Potatoes are the ultimate comfort food, featuring layers of tender potatoes smothered in a rich, creamy sauce made with sautéed onions, garlic, and fresh thyme. With its creamy texture and savoury flavour, it's the perfect side to elevate any occasion.

Scalloped Potatoes

3 Tbsp butter
1 small white or yellow onion, peeled & thinly sliced
4 large garlic cloves, minced
1/4 cup all-purpose flour
1 cup chicken stock or vegetable stock
2 cups whole milk (or half and half)
1 1/2 tsp Kosher salt
1/2 tsp black pepper
2 tsp fresh thyme leaves, divided
4 lbs potatoes, sliced into 1/8-inch rounds
2 cups freshly-grated sharp cheddar cheese
1/2 cup freshly-grated Parmesan cheese, plus extra for serving

Heat oven to 400°F.  Grease 9x13-inch baking dish. Melt butter in a large sauté pan over medium-high heat. Add onion, sauté for 4-5 minutes until soft & translucent. Add garlic, sauté for an additional 1-2 minutes until fragrant.  Stir in the flour until it is evenly combined, & cook for 1 more minute.

Gradually pour in stock, & whisk until combined. Add in milk, salt, pepper, 1 tsp thyme, & whisk until combined.  Continue cooking for an additional 1-2 minutes until sauce begins to simmer around the edges of pan & thickens. Then remove from heat & set aside.

Spread half of sliced potatoes in an even layer on the bottom of pan.  Top evenly with half of cream sauce. Sprinkle evenly with 1 cup of shredded cheddar cheese, & all of Parmesan cheese. Top evenly with remaining sliced potatoes, other half of cream sauce, & remaining 1 cup of cheddar cheese.

Cover pan with aluminum foil & bake for 30 minutes. Remove foil & bake uncovered for 25-30 minutes, or until potatoes are cooked through. Transfer pan to a cooling rack, sprinkle with remaining teaspoon of thyme & extra Parmesan.
