Kale chips are a favourite around the Farm! They are crunchy and delicious, and a great way to use quite a lot of kale when you don't have other plans for it. Try sprinkling them on top of soup or salad for a little bit of texture.
Sour Cream & Onion Kale Chips
1 bunch kale*
Remove the kale leaves from the stem and rip into chip size pieces
2 T white vinegar
5 green onions*, sliced into large pieces
¼ cup raw pine nuts, cashews, or sunflowers seeds
In a blender combine vinegar, bell pepper, green onion & raw nuts until smooth
In a large bowl, combine puree and kale leaves. Massage thoroughly until kale leaves are completely coated with puree.
Arrange leaves in an even layer on dehydrator sheets or a baking tray. Sprinkle with salt.
Dehydrate at 125F for 8 hours
Or bake in the oven at 250F for 1 ½-2 hours
Farm Fresh Tip - thinly sliced red onions and parsley make great additions too!
