Simple, delicious, and packed with fresh spinach, these Spinach and Garlic Potato Patties are great topping a salad, stuffed in a bun or eaten straight from the pan! Try making some extras and freezing them for a quick meal - just reheat in the oven or an acti-fry.
Spinach and Garlic Potato Patties
4 potatoes, boiled, peeled and quartered
¼ C milk
1 T butter
1 T oil
1 onion, diced
8-10 oz spinach
3 garlic cloves, minced
Salt and pepper
1 C parmesan, shredded
2 T lemon juice
2 C bread crumbs
¼ C olive oil

Mash together potatoes and milk until smooth.
Heat butter and oil in a large skillet over medium heat. Add onions, cooking until translucent, 2-3 minutes. Add spinach and garlic, season with salt and pepper and cook for two more minutes until spinach is wilted. Add spinach mixture to the mashed potatoes.
Stir in cheese and lemon juice to the potatoes. Add egg and bread crumbs, stirring until combined.
Shape into patties and pan fry in a large skillet until golden brown on both sides, 3-4 minutes, transferring to a paper-lined plate. Serve with yogurt and fresh herbs!
