This recipe has nothing to do with veggies but it’s fun and delicious, so why not?!
Tofu Chocolate Mousse
340 g Soft/silken tofu
¾ C Cocoa
⅓ C Maple syrup
¼ C Coconut oil
½ C Milk

Add all ingredients to a high speed blender and blend until everything is completely smooth. Stop and scrape down the sides as necessary.
Pour the mousse into glass jars or containers and let chill for 2 hours or overnight. This will allow it to thicken.
