Apple Cake
3/4 cup dark brown sugar
2 large eggs
1/3 cup neutral oil, like canola or grapeseed
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 small apples, peeled, cored & chopped into ¼”-½” pieces (about 2 cups)
1/2 cup toasted walnuts, chopped

Position rack in center of oven & preheat to 350°F. Butter or coat 9” round baking pan & line bottom with round of parchment paper.
In large bowl, whisk brown sugar & eggs until pale & foamy, about 1 min. Add oil, vanilla, cinnamon, nutmeg, salt, whisk until smooth.
Add flour, baking powder & baking soda & whisk until well-combined. Fold in apples & ¼ cup of the nuts.
Pour batter into prepared pan & gently smooth top. Tap pan gently on the counter to release any air bubbles. Sprinkle remaining ¼ cup nuts over cake.
Bake until puffed & golden & a tester inserted into the center comes out clean, 30-40 minutes. There may be a bit of moisture on the tester from the apples. Set pan on a rack to cool for about 15 minutes.
Carefully turn the cake out onto a cooling rack & turn right side up.
Store cake in airtight container at room temperature or in the refrigerator for up to 2 days.
