Daikon radish is one of those vegetables that we often find clients aren't that familiar with. This salad is a perfect way to give it a try - the recipe is quick and easy to put together, and is a nice refreshing crunchy salad to enjoy over the winter months.
Carrot and Daikon Salad
1/2 medium-sized daikon radish, peeled
1 carrot, peeled
1-2 thai chili pepper, chopped (optional, substitute scallion)
1 Tbsp sugar
1 Tbsp rice vinegar
1 Tbsp sesame oil
1 handful of roasted sesame seeds

Cut the daikon radish and carrot into "spaghetti strands" with a spiralizer. If you don't have a spiralizer, chop into fine matchsticks.
Transfer them into a container, sprinkle in chopped Thai chili peppers (or chopped scallion for non-spicy version).
Toss in sugar, rice vinegar, sesame oil and sesame seeds, mix well and let sit for 10 minutes to enjoy!
