Cucumber Salsa

If you are looking for a nice bright salsa to beat the summer heat, this is the recipe for you! The cucumber makes this nice and cooling and adds a fresh crunch. Try it was corn chips as a dip, or use as a topping on tacos.

Cucumber Salsa

2 large cucumbers, peeled & diced
2 cups diced tomatoes (plum, cherry, or slicers)
1 cup diced red onions (or use green onions)
2/3 cup chopped cilantro
2 jalapeño peppers diced (or use dried chili flakes)
2 cloves garlic, grated or minced
6 Tbsp lime juice (about 2 large limes)
1 tablespoon olive oil
Kosher salt, to taste
Freshly ground black pepper, to taste

Combine the cucumbers, tomatoes, onions, cilantro, jalapeños, garlic, lime juice, olive oil, salt, & black pepper in a large bowl. Toss together to coat, taste, & season with more salt & black pepper as needed.

Cover & refrigerate for 30 minutes to let all the flavors meld together.

Serve with tortilla chips or on tacos, lettuce wraps, salads, fish, or any dish that needs a hint of freshness & brightness.
