Garlic scapes are the flower stock of hardneck garlic varieties. The flower is removed to encourage the development of large garlic bulbs, and is completely edible. We recommend removing the flower bud (try infusing in vinegar) and try snapping the cut end off, it will naturally break where the fibrous part ends.
Oven Roasted Garlic Scapes
Garlic scapes, rinsed
Olive oil
Kosher salt & pepper
Preheat the oven to 425 F. Line a rimmed baking sheet with parchment paper.
Cut the garlic scapes in half once & arrange on the baking sheet. Drizzle with olive oil & massage evenly onto the scapes. Season with salt and pepper.
Roast for 20-25 minutes, tossing halfway through, until the tips turn golden brown and crisp. Serve hot or room temperature.
