Radicchio Risotto

This Radicchio Risotto is creamy, comforting, and packed with flavour! The radicchio adds a lovely touch of bitterness, while the parmesan and butter bring in all the richness. It’s the perfect balance of sweet and savoury—ideal for a cozy meal.

Radicchio Risotto

1 small head of radicchio, shredded
1 cup arborio rice
4 tablespoons butter, divided
1 onion, diced
1/2 cup parmesan
1/2 cup red wine
4 cups vegetable or chicken stock
salt and pepper to taste

Heat medium sized pot with tall sides over low heat. Sauté onion in 1 tbsp of butter until soft & translucent. Add radicchio & pinch of salt & cook, stirring, for 5 mins. Remove vegetables from pan & reserve.

In same pan, toast rice & 1 tbsp of butter for about 5 mins or until rice begins to appear translucent around edges. Stir onion & radicchio into rice then add red wine. Simmer rice in wine, stirring frequently until all wine is absorbed. Add stock, about a half cup at a time, letting rice absorb most of liquid before adding next ladle. Taste rice when it starts to puff up, it should be tender, but a bit chewy.

When rice is ready, remove from heat & add grated cheese & rest of butter. Stir to combine. Season & serve immediately on a large platter or individual plates.
