Oven-Baked Chicken with Celery and Fennel
This is our new go-to in the house. I love how simple it is, and how the veggies cook with the chicken, thus enhancing the flavor of both. Like most things, I usually burn it (I secretly like the burnt flavor though ;))and it is still delicious but do check on it as cooking time depends on how big you like to cut the chicken. This a no-recipe recipe: adapt it to your needs according to these general guidelines.
Warming Chickpea Mushroom Ragout with Crispy Sage
Ragout is just a fancy word for stew, so don't be intimidated! This hearty winter stew filled with chickpeas and mushrooms will warm you from head to toe, and is just as delicious served on a bed of rice, as creamy polenta, or comforting mashed potato. You could even top it with a poached egg and serve with crusty bread for dipping.
Cranberry & Kale Meatballs with Cranberry Aioli
It's no secret, we love kale, and we add it to anything and everything! If you aren't as accustomed to eating kale, this is a great recipe to try. When chopped finely you barely even notice that it's there, but your body will thank you for all the kaley goodness! These are just as good on pasta, or as a party hors d'oeuvre.
Roasted Sweet Potato & Butter Beans with Massaged Kale
Massaging your kale turns it into a delicate, tender, dark-green delight that will keep well in the fridge for up to a week!
