Spinach Gratin 1 T olive oil 1 onion, diced 1 t salt ½ t each, pepper, thyme 2 T flour 1 ½ lb spinach, roughly chopped 1 C cream 1 ½ C swiss, shredded ¾ C bread crumbs 3 T butter, melted  --- Heat oil in a large skillet over medium heat and cook onion until soft, about 5 min.
